Typical dishes

It must be said that Sicilian cuisine is so rich and varied that it is impossible to make a precise, complete and detailed list of dishes to try.

In any case, among the typical dishes that one cannot help mentioning, in my opinion, there is the caponata , a dish made with a series of fried vegetables and then flavored in a sweet and sour sauce.

Caponata is generally used as a side dish or appetizer, but in the past it was a single dish, accompanied by bread.

In Sicily there is still a wide debate about which is the original recipe for pasta with Sicilian sardines which, however, has three essential ingredients: sardines, wild fennel and pasta.

According to tradition, pasta with sardines was invented by an Arab cook during the military campaign of the Arabs in the area of ​​Syracuse, according to another version the fact would have happened in Mazara del Vallo. It doesn't matter to us, we like it and we eat it.

As an alternative (but there would be many) to pasta with sardines, I suggest pasta with broccoli arriminati (mixed), a first course seasoned with a sauce based on green broccoli, olives or raisins, pine nuts and toasted breadcrumbs.
